durum WHEAT
Durum wheat is high in protein + fiber and low in sugar. It is rich in vitamin B, iron + magnesium, making it a healthier flour that is easy to digest.

Our pasta dough is extruded through bronze dies. This process is a traditional Italian method that creates a rough texture to the pasta that allows it to soak up the sauce better than store bought dried pasta

boiling your PASTA
The pasta boils for 1-3 minutes. Depending on the shape, density and personal preferences of "al dente". AL DENTE translates to "to the tooth" and it refers to the firmness of the pasta.

cooking TIP
Transfer the pasta directly from the boiling water to the simmering sauce. Add some pasta water as needed. This method marries the pasta + sauce and gives you the control to make it perfect every time
